Chicken Teriyaki Don Inspired Recipe
with Less Salt, More Taste!
Rice
Cook unseasoned seaweed with wholegrain rice
Sauce
4 tbsp lower sodium soy sauce 2 tbsp pineapple juice
1 tbsp rice vinegar
2 tbsp water
5g grated garlic
5g grated ginger
Chilli flakes, a pinch as needed
Mix all the ingredients together
Cornstarch slurry
1 tbsp cornstarch
2 tbsp water
Note: whisk until no clumps remain
Chicken
400g sliced breast meat
Marinate the chicken in the pre prepared marinade for at least one hour but up to overnight
Remove the chicken from the marinade and pan fry in oil until cooked through
Set aside the cooked chicken and pour in the marinade, thicken with the cornstarch slurry as needed
Serve the chicken and sauce over rice with an egg and spring onions
